🍓🍨 💛 ~A Few Words From Susan~ 💛🍨🍓 One of the first desserts I ever made with my granddaughter was a very 1950s icebox cake. We spread chocolate wafers with ice cream, stacked them into a log, tucked it into the refrigerator, and waited for the magic to happen. It was simple enough for small hands, but special enough that she could carry it proudly to the table and tell her parents she had made dessert. That moment brought me right back to my own grandmother’s kitchen, where I had made the same kind of “recipe” years before. No oven, no fuss, just a little layering, a little patience, and the delight of serving something
sweet. That is what I love about no-bake desserts. They give you a way to make something memorable without making the kitchen hotter or the day more complicated. This week’s article is full of ideas you can put together easily, from ice cream with fruit to banana pudding, cream pies, icebox cakes, tiramisu, and
no-bake cheesecake. In this week’s video, you will see another relaxed way to serve dessert, with a chocolate, fruit, and cheese board that feels generous and fun
without requiring much more than good ingredients and thoughtful arrangement. The Cestari Cutting Board is 20% off this week with the code printed below. It gives you a sturdy, attractive surface for arranging and serving a dessert board, sliced fruit, cake pieces, and other no-bake sweets. I hope this issue reminds you that dessert does not have to be complicated to feel special. Sometimes the sweetest memories
start with the simplest recipes. Best, Susan

Build a Chocolate Dessert Board That Impresses
Tip of the Week Use texture to keep simple desserts interesting. Add crushed cookies, toasted nuts, shaved chocolate, crisp meringues, granola, or brittle so creamy and chilled desserts have a little
contrast.
Sweet Ideas for TonightNo-bake desserts are one of the smartest ways to end a meal when the oven feels like too much, company is coming, or dinner needs one more thoughtful touch. The best ones are simple, specific, and built from ingredients that are easy to keep on hand: fruit, cream, cookies, ice cream, instant
pudding, chocolate, prepared crusts, and good store-bought cake. The fastest no-bake dessert is still one of the best: ice cream with fruit. Vanilla ice cream with sliced strawberries and a spoonful of jam warmed into a quick sauce feels very different from a plain scoop. Peaches with butter pecan, raspberries with
chocolate, blueberries with lemon sorbet, or cherries with pistachio ice cream all make easy combinations. Add toasted nuts, crushed cookies, shaved chocolate, or a drizzle of honey, and dessert is done in five minutes. For something nostalgic, banana pudding is hard to beat. Layer vanilla wafers, sliced bananas, and
instant vanilla pudding in a serving bowl or individual glasses, then chill until the cookies soften. Whipped cream on top makes it feel finished. The same idea works for icebox cakes. Layer chocolate wafers or graham crackers with whipped cream, then refrigerate until the layers settle into a sliceable cake. Add berries, lemon curd, cocoa, or espresso powder to change the flavor without changing the method. Purchased cakes are useful, too. A sponge cake, pound cake, or bakery biscuits can become strawberry shortcake with sweetened berries and whipped cream. Spoon sliced strawberries with a little sugar and lemon juice, let them sit until syrupy, then layer them over cake. For a more dressed-up version, add blueberries, peaches, or a little mascarpone folded into the cream. Prepared crusts open the door to cream pies and no-bake cheesecakes. A store-bought graham cracker or cookie crust can be filled with chocolate pudding, coconut cream, banana cream, lemon filling, or a whipped cream cheese mixture. You can also make a simple crumb crust without baking: combine cookie or graham cracker crumbs with melted butter, press
the mixture into a pie plate, and refrigerate until firm before filling. A basic no-bake cheesecake filling can be as simple as cream cheese, sugar, vanilla, and whipped cream, spread into a crumb crust and chilled until set. Top it with berries, caramel, chocolate sauce, or crushed cookies. Even tiramisu belongs in
this family. Ladyfingers dipped in coffee, layered with mascarpone cream, and dusted with cocoa become better as they rest. The trick is to think in layers of tastes and textures: something creamy, something fruity or chocolatey, something crisp. With a few good shortcuts, a no-bake dessert stops feeling like the
easy way out and starts feeling like the best plan for tonight.

Reader's Tips for No-Bake Desserts |
Carol of Asheville NC writes, “I keep a box of good cookies in the pantry for quick summer desserts. A few cookies, a scoop of ice cream, and sliced fruit look much more intentional when they are served in a pretty bowl.” Elaine of Santa Fe NM suggests, “For an easy no-bake pie, I use a refrigerated graham cracker crust and fill it with lemon pudding mixed with whipped topping. After a few hours in the refrigerator, it slices beautifully and tastes bright and cool.” Marilyn of Traverse City MI shares,
“When berries are at their best, I layer them with lightly sweetened whipped cream and cubes of store-bought pound cake in small glasses. Everyone gets their own dessert, and I can assemble them before dinner.” Joan of Bend OR adds, “I make a simple ice cream sandwich dessert by layering store-bought ice cream sandwiches in a pan with
whipped cream and chocolate sauce. It freezes into neat slices and always disappears quickly.” Patricia of Franklin TN notes, “A bowl of cold vanilla pudding can become dessert for company with sliced bananas, crushed wafers, and a little shaved chocolate on top. It takes only a few minutes, but it feels
finished.” |
💡 Answer to Trivia Question: The Grasshopper pie, named after the cocktail, is made by combining whipped cream with cream cheese, crème de menthe, and crème de cacao, and placing the mixture in a chocolate crumb crust. The refrigerated pie is topped with more whipped cream, chocolate shavings, and a drizzle of crème de menthe.
