At its core, ceci and cauliflower is exactly what it sounds like: tender chickpeas (ceci) simmered with florets of cauliflower in a gently seasoned broth. Garlic and olive oil provide depth, while a bit of red pepper adds quiet warmth. Some cooks enrich the broth with tomato; others keep it golden and clear. It’s a flexible, forgiving dish—made for weeknights, end-of-month
