Simple and Satisfying Potato Leek Soup Recipe

In this video, we’ll walk you through an easy, classic Potato Leek Soup recipe, based on Julia Child's Potage Parmentier, that’s perfect for any season. With only 5 ingredients – potatoes, leeks, water, cream, and a touch of salt and pepper – you’ll discover how to create a creamy, flavorful soup that’s both comforting and satisfying.

Tip of the Week

Reheat leftover baked potatoes in an air fryer for a crispier skin. Set the air fryer to 350°F for about 5-7 minutes for best results.

Perfect Baked Potatoes

Ingredients

Yield: 4 servings

4 large russet potatoes
1 teaspoon olive oil
Kosher salt
4 tablespoons unsalted butter

Preparation

Preheat your oven to 400°F.
Scrub the potatoes thoroughly under running water and pat them dry.
Rub each potato with olive oil and a light sprinkle of salt. Use a fork to poke a few holes in the skin to allow steam to escape.
Arrange the potatoes directly on the center oven rack and roast for 45 minutes to an hour. The potatoes should feel tender when pierced with a knife and reach an internal temperature of 210°F.
Carefully remove the potatoes from the oven. Slice each one open lengthwise, add a tablespoon of butter, and serve while hot.
