I am always excited to see the first zucchini in my CSA box, but can become overwhelmed at times by the sheer volume of zucchini that arrive every week in late summer.
So, it seems
appropriate to give you some of my favorite ways to manage that ever growing pile of zucchini that characterizes midsummer. Today's recipe is a family favorite that has been a hit with my kids since they were small. It is really easy, uses only 4 ingredients, and takes about 5 minutes of prep time. How to Grill Zucchini |
Grilling zucchini is a delightful way to bring out its natural sweetness and add a smoky flavor that enhances any meal. With its firm texture and mild taste, zucchini makes an excellent candidate for the grill. Here’s a comprehensive guide to grilling zucchini, ensuring it doesn't fall through the grates and cooks evenly every time. Choosing and Preparing Zucchini: Start with fresh, medium-sized zucchini. Smaller zucchini are more tender and have fewer seeds, making them ideal for grilling. Wash the zucchini thoroughly and trim the ends. For even cooking, slice the zucchini into uniform pieces. You can cut them into rounds or lengthwise into strips, depending on your preference. Seasoning: Drizzle the zucchini slices with olive oil and season them with kosher salt , freshly ground black pepper, and your favorite herbs or spices. A simple mix of minced garlic, paprika, and a touch of lemon zest works wonderfully. Using Grill Mesh or Vegetable Basket: One common challenge when grilling zucchini is preventing the pieces from falling through the grates. This is where grill mesh or a vegetable basket becomes invaluable. Nonstick grill mesh is perfect for containing smaller zucchini pieces while allowing heat and smoke to circulate and flavor the vegetable. Grilling Process: Preheat your grill to medium-high heat (about 400°F). Place the seasoned zucchini slices on the grill mesh or in the vegetable basket. Grill for about 3-4 minutes per side, until the zucchini is tender and has beautiful grill marks. Be careful not to overcook; you want the zucchini to maintain some firmness. Serving: Once grilled to perfection, remove the zucchini from the grill and transfer to a serving platter. A squeeze of fresh lemon juice and a sprinkle of chopped fresh herbs, such as parsley or basil, can add a bright finishing touch. |
