Discover the World of Chocolate

 

Chocolate comes in three main types - white, milk, and dark.

Each type has its own unique flavor profile and characteristics.

White chocolate is made with cocoa butter, sugar, milk, and vanilla, giving it a sweet, creamy taste.  It differs from milk and dark chocolate as it contains no cocoa solids.  The FDA requirements for white chocolate are that it must contain at least 20% cocoa butter and 14% milk, and no more than 55% sugar

Milk chocolate is a classic favorite, with a light brown color and a sweet flavor. To be considered milk chocolate it must contain at least 10% chocolate liquor and 12% milk.  Chocolate liquor is not an alcoholic drink, but a term that refers to the base of all milk and dark chocolates - it is a paste made from the inside of the cocoa bean that contains 100% cocoa.

Dark chocolate, is less sweet than milk chocolate and often has a stronger chocolate taste.  It must contain must contain at least 15% chocolate liquor but most quality dark chocolate contains closer to about 50%.

Bittersweet chocolate is similar to dark chocolate but with a more bitter flavor.  It usually contains at least 66% of chocolate liquor, and less sugar than milk or dark chocolate.

Cocoa powder is made from cocoa solids and is great for baking.
